Ingredients

  • 200g rice noodles
  • 2 tablespoons coconut oil
  • 2 garlic cloves, minced
  • 300g chicken breast
  • 400ml coconut milk
  • 500ml vegetable broth
  • 2 tablespoons red curry paste
  • Juice of 1 lime
  • 200g broccoli, chopped
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. Begin by cooking the noodles according to the package instructions. Drain and set aside.
  2. In a large pot, heat a tablespoon of oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the chicken breasts and cook until no longer pink in the center, about 6-7 minutes each side. Remove from pot and slice thinly.
