Ingredients

  • 150 g quinoa
  • 100 g cherry tomatoes
  • 100 g zucchini
  • 150 g grapes
  • 2 cups mixed greens
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 2 tbsp water
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Cook quinoa according to package instructions, then set aside to cool.
  2. Roast cherry tomatoes and zucchini in the oven at 200°C for 15-20 minutes until slightly charred.
