Ingredients

  • 500g chicken thighs
  • 50g jerk seasoning
  • 200g rice
  • 400ml coconut milk
  • 200g black beans
  • 200g pineapple
  • 50g red bell pepper
  • 50g lime crema
  • Fresh cilantro for garnish

Instructions

  1. Start by marinating the chicken thighs in jerk seasoning for at least 30 minutes, preferably overnight for maximum flavor.
  2. In a saucepan, prepare coconut rice by simmering rice with coconut milk and water according to package instructions.
  3. While the rice cooks, grill or pan-sear the marinated chicken thighs over medium heat until cooked through and charred, about 6-8 minutes per side.
  4. Once the chicken is done, let it rest for a few minutes, then slice it into strips.
  5. Prepare the pineapple salsa by mixing diced pineapple, red bell pepper, lime juice, and a pinch of salt in a bowl.
