Authentic Egyptian Koshari Bowl: A Comforting Layered Delight

Ingredients

  • 200g lentils
  • 200g rice
  • 200g pasta
  • 400g crushed tomatoes
  • 1 onion
  • 400g canned chickpeas
  • 2 tablespoons oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt to taste
  • Crispy fried onions for topping
  • Fresh coriander for garnish

Instructions

  1. Rinse 200g of lentils and boil in a pot of salted water until tender, about 20 minutes; drain and set aside.
  2. In a separate pot, cook 200g of rice according to package instructions.
  3. Boil 200g of pasta until al dente, drain under cold water, and set aside.
  4. In a pan, heat 2 tablespoons of oil, add 1 chopped onion, and sauté until golden brown.
  5. Stir in 400g of crushed tomatoes, 1 teaspoon of cumin, 1 teaspoon of coriander, and salt to taste; simmer for 15 minutes.
  6. Add 400g of canned chickpeas (drained) to the sauce and mix well.
  7. Layer the cooked rice at the bottom of a bowl, followed by lentils, pasta, and chickpeas with sauce.
  8. Top with crispy fried onions and fresh coriander for garnish.
