Ingredients

  • 1 medium cauliflower, cut into florets
  • 200g bulgur wheat
  • 50g fresh parsley, chopped
  • 30g fresh mint, chopped
  • 200g cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Zest of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Cut the cauliflower into small florets and place them on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper. Toss to coat.
  4. Roast in the oven for about 25-30 minutes, or until golden brown and tender, stirring halfway through.
