Ingredients

  • 500g lamb, cut into pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup bulgur, cooked
  • 1 cup parsley, finely chopped
  • 1 cup tomatoes, diced
  • 2 green onions, chopped
  • Juice of 2 lemons
  • 200g chickpeas, cooked
  • 2 tablespoons tahini
  • Salt to taste
  • Pita chips for serving

Instructions

  1. Prepare the lamb by marinating it with olive oil, garlic, paprika, cumin, salt, and pepper for at least 30 minutes.
  2. Skew the marinated lamb pieces onto skewers.
  3. Grill the lamb skewers on medium-high heat for about 10-12 minutes, turning occasionally until cooked through.
  4. While the lamb is grilling, prepare the tabbouleh by finely chopping parsley, tomatoes, and green onions.
  5. In a bowl, combine the chopped vegetables with cooked bulgur, lemon juice, olive oil, salt, and pepper.
  6. To make the hummus, blend chickpeas, tahini, lemon juice, garlic, olive oil, and salt until smooth.
  7. Once the lamb is ready, remove it from the skewers and let it rest for a few minutes.
  8. Assemble the bowl by placing a portion of tabbouleh, hummus, and grilled lamb pieces.
  9. Add pita chips to the side for crunch and garnish with fresh parsley and lemon wedges.
