Ingredients

  • 500g beef (sirloin or tenderloin)
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 200g cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1 red onion (sliced)
  • 200g lettuce (shredded)
  • 100g olives (optional)
  • 200g Greek yogurt

Instructions

  1. Preheat your grill or grill pan to medium-high heat.
  2. Cut the beef into uniform cubes, about 1 to 1.5 inches each.
  3. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the beef cubes and marinate for at least 30 minutes.
  4. While the beef marinates, chop the vegetables: cherry tomatoes, cucumber, red onion, and lettuce.
  5. Thread the marinated beef onto skewers, leaving a little space between each piece.
  6. Grill the skewers for 10–12 minutes, turning occasionally, until cooked to your desired doneness.
