Ingredients

  • 2 chicken thighs (about 400g)
  • 2 tablespoons lemon juice
  • 3 garlic cloves, minced
  • Salt and pepper to taste
  • 1 cup wild rice (uncooked)
  • 200g asparagus
  • Fresh parsley for garnish
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a bowl, mix the juice of 1 lemon, minced garlic, salt, and pepper to create the marinade.
  3. Marinate the chicken thighs in the lemon-garlic mixture for at least 30 minutes.
  4. While the chicken is marinating, rinse the wild rice and cook it according to package instructions.
  5. Spread the marinated chicken thighs on a baking sheet and roast for 25-30 minutes or until the chicken is cooked through.
  6. Meanwhile, steam or roast the asparagus for about 10 minutes until tender.
  7. Once cooked, fluff the wild rice with a fork.
