Ingredients

  • 1 cup polenta
  • 4 cups water
  • 2 cups fresh spinach
  • 2 large eggs
  • 1 tablespoon olive oil
  • Salt to taste
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Boil 4 cups of water in a medium saucepan. Gradually whisk in 1 cup of polenta, stirring constantly to avoid clumps.
  2. Cook for about 15-20 minutes until the polenta is thick and creamy. Stir in salt to taste.
  3. While the polenta is cooking, heat a tablespoon of olive oil in a skillet over medium heat. Add 2 cups of fresh spinach and sauté until wilted.
  4. In another frying pan, use medium heat to add a little oil and crack 2 eggs into it. Cook until the whites are set but the yolks remain runny.
  5. To serve, spoon the creamy polenta into bowls, top with sautéed spinach, and place the fried eggs on top.
