Ingredients

  • 200 grams lentils
  • 2 eggs
  • 1 avocado
  • 150 grams cherry tomatoes
  • Fresh cilantro or parsley (for garnish)
  • Salt and pepper to taste

Instructions

  1. Cook lentils according to package instructions until tender.
  2. While lentils are cooking, preheat oven to 200°C (400°F).
  3. Slice tomatoes in half, place on a baking sheet, and roast for 15-20 minutes until soft.
  4. Bring a pot of water to a gentle simmer and poach the eggs for 3-4 minutes.
