Ingredients

  • 1 cup brown rice
  • 1 cup lentils
  • 1 teaspoon turmeric
  • 2 cups water
  • 1 pumpkin (about 500g)
  • 1 tablespoon olive oil (for sautéing)
  • 3 cups chopped kale
  • 1 tablespoon tahini (for drizzling)
  • 2 tablespoons sesame seeds (for garnish)

Instructions

  1. Rinse 1 cup of brown rice and cook according to package instructions.
  2. In a saucepan, combine 1 cup of lentils, 3 cups of water, and 1 teaspoon of turmeric. Bring to a boil, then reduce heat and simmer until tender.
  3. Meanwhile, preheat the oven to 400°F (200°C). Cut pumpkin into slices, toss in olive oil, and roast for 25-30 minutes until golden and tender.
  4. In a pan, heat 1 tablespoon of olive oil over medium heat. Add chopped kale and sauté until wilted (about 5 minutes).
  5. Once the rice and lentils are cooked, fluff them with a fork.
  6. Layer the bowl starting with brown rice, followed by lentils, sautéed kale, and roasted pumpkin slices.
  7. Drizzle with tahini for added flavor and sprinkle sesame seeds on top.
