Ingredients

  • 500g sweet potatoes
  • 1 cup (175g) barley
  • 200g kale
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Chipotle crema (to taste)
  • Toasted seeds or nuts (optional)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Peel and cube 500g of sweet potatoes, then toss them with olive oil, salt, and smoked paprika.
  3. Spread the sweet potato cubes on a baking sheet and roast for 25-30 minutes until tender and caramelized.
  4. While the sweet potatoes are roasting, cook 1 cup (175g) of barley according to package instructions, typically boiling for about 30-40 minutes until tender.
  5. In the last 10 minutes of the sweet potatoes cooking, wash and tear kale into bite-sized pieces, tossing them with a small amount of salt and olive oil.
  6. Add the kale to the baking sheet in the last 5 minutes to create crispy kale chips.
  7. Once everything is cooked, assemble your bowl starting with a base of barley topped with roasted sweet potatoes, kale chips, and a generous dollop of chipotle crema.
