Ingredients

  • 1 medium head of cauliflower (about 800g)
  • 400ml coconut milk
  • 2 tablespoons curry powder
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 100g cashews
  • Fresh cilantro or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the cauliflower into florets. Toss them in olive oil, salt, and pepper before spreading on a baking sheet.
  3. Roast the cauliflower for about 25-30 minutes, or until golden and tender.
  4. While the cauliflower is roasting, make the cauliflower rice by grating or processing the cauliflower until it resembles rice grains.
