Ingredients

  • 200g soba noodles
  • 1 cup cauliflower florets
  • 1 cup edamame (shelled)
  • 100g cashews (soaked)
  • 200ml coconut milk
  • 2 tablespoons curry powder
  • 1 clove garlic
  • Salt and pepper to taste
  • Olive oil for roasting

Instructions

  1. Cook soba noodles according to package instructions. Drain and set aside.
  2. Preheat your oven to 400°F (200°C).
  3. Toss cauliflower florets in olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden and tender.
