Spicy Tahini Tofu Rice Noodle Bowl

Ingredients

  • 400g firm tofu
  • 200g rice noodles
  • 2 tablespoons tahini
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha (or to taste)
  • 1 tablespoon vegetable oil
  • 1 red bell pepper
  • 2 green onions

Instructions

  1. Press the tofu for about 20 minutes to remove excess moisture, then cut it into cubes.
  2. In a bowl, mix tahini, soy sauce, sriracha, and a bit of water to create the spicy tahini sauce.
  3. Heat oil in a pan over medium heat; add the tofu and cook until crispy and golden brown on all sides.
  4. In another pot, cook the rice noodles according to package instructions, usually about 4-6 minutes.
  5. Slice the red peppers and roast them in the oven at 200°C for about 15 minutes until slightly charred.
  6. Drain the noodles and toss them with the spicy tahini sauce until well coated.
