Ingredients

  • 200g glass noodles
  • 500g chicken breasts, sliced
  • 100ml coconut milk
  • Juice of 2 limes
  • 2 medium zucchini
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook glass noodles according to package instructions, then drain and set aside.
  2. In a bowl, marinate chicken pieces in lime juice, coconut milk, salt, and pepper for at least 30 minutes.
  3. Preheat oven to 200°C (400°F).
  4. Slice zucchini into rounds, toss with olive oil, salt, and pepper, and arrange on a baking sheet.
