Ingredients

  • 1 can (400g) chickpeas
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Salt to taste
  • Pepper to taste
  • 1 bunch kale
  • 1 avocado
  • 2 tablespoons lime juice
  • 1 tablespoon honey (or maple syrup for vegan option)
  • 1/2 teaspoon chili flakes

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Rinse and drain the canned chickpeas, then pat them dry with a paper towel.
  3. Toss the chickpeas with olive oil, chili powder, cumin, salt, and pepper in a bowl.
  4. Spread the chickpeas on a baking sheet and roast for 25-30 minutes until crispy, shaking halfway through.
  5. In the meantime, prepare the chili-lime vinaigrette by whisking together lime juice, olive oil, honey, and chili flakes in a small bowl.
  6. Wash the kale and massage it with a bit of olive oil and salt until softened.
  7. Slice the avocado and set aside.
  8. Once the chickpeas are done, let them cool slightly.
  9. In a large bowl, assemble the kale as the base, then top with roasted chickpeas and avocado.
  10. Drizzle the chili-lime vinaigrette over the salad and toss gently before serving.
