Ingredients

  • 200g halloumi cheese
  • 1 cucumber
  • 2 tomatoes
  • 100g olives
  • 150g fresh spinach
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the grill or a grill pan over medium heat.
  2. Slice the halloumi cheese into 1 cm thick slices.
  3. Grill the halloumi slices for 2-3 minutes on each side until golden and slightly crispy.
