Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 lemons
  • 3 tbsp olive oil
  • 2 tsp dried thyme
  • 1 cup quinoa
  • 2 medium zucchinis
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Start by marinating the chicken. In a bowl, combine juice of 2 lemons, 2 tbsp olive oil, 2 tsp thyme, salt, and pepper.
  2. Add chicken breasts to the marinade, cover, and refrigerate for at least 30 minutes.
  3. While the chicken marinates, prepare quinoa. Rinse 1 cup of quinoa under cool water, then cook according to package instructions.
