Ingredients

  • 1 cup lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 400g chopped tomatoes
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste
  • 3 cups vegetable broth
  • 2 eggs
  • Fresh herbs for garnish
  • Cherry tomatoes, halved for garnish

Instructions

  1. Rinse 1 cup of lentils under cold water and drain them.
  2. In a saucepan, heat 1 tablespoon of olive oil over medium heat.
  3. Add 1 chopped onion and sauté until translucent.
  4. Stir in 2 minced garlic cloves and cook for another minute.
  5. Add 400g of chopped tomatoes, 1 teaspoon of paprika, 1 teaspoon of cumin, salt, and pepper to taste.
  6. Mix in the lentils and 3 cups of vegetable broth.
  7. Simmer for 20-25 minutes until lentils are tender.
  8. Meanwhile, poach eggs in a separate pot of boiling water.
  9. To serve, ladle lentils into a bowl, top with a poached egg, and garnish with fresh herbs and cherry tomatoes.
