Ingredients

  • 2 catfish fillets
  • 2 tablespoons Cajun spices
  • 1 cup red quinoa
  • 2 cups water
  • 1 cup corn (fresh or frozen)
  • 1 cup black-eyed peas (cooked)
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • 1 lime, cut into wedges

Instructions

  1. Start by seasoning the catfish fillets with Cajun spices and a little salt.
  2. Heat a skillet over medium-high heat and add a splash of oil.
  3. Once hot, add the catfish fillets and cook for 4-5 minutes on each side until blackened and cooked through.
  4. While the fish cooks, rinse the red quinoa under cold water and place it in a pot with double the amount of water.
  5. Bring to a boil, then cover and reduce heat to low, cooking for about 15 minutes until quinoa is fluffy.
  6. In another pan, roast the corn until slightly charred.
  7. Combine the black-eyed peas with the corn and heat through.
  8. Slice the avocado and set aside.
  9. Assemble the bowl by placing the quinoa at the base, topped with black-eyed peas and corn, followed by the blackened catfish and avocado slices.
  10. Garnish with fresh cilantro and a squeeze of lime juice before serving.
