Coconut Curry Lentil & Millet Bowl: A Hearty Vegan Delight

Ingredients

  • 200g red lentils
  • 100g millet
  • 1 medium cauliflower
  • 1 tablespoon olive oil (for roasting)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoon curry powder
  • 400ml vegetable broth
  • 200ml coconut milk
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Chop cauliflower into florets and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden.
  3. In a saucepan, heat a tablespoon of oil over medium heat. Add diced onions and sauté until translucent.
  4. Add minced garlic and ginger to the onions, cooking for an additional minute until fragrant.
  5. Stir in the curry powder, followed by red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the lentils are cooked.
  6. Once lentils are tender, stir in coconut milk and allow it to simmer for an additional 5 minutes.
  7. Cook millet according to package instructions, usually in boiling water for about 15 minutes.
  8. Serve the coconut curry lentils over a bed of fluffy millet, topped with roasted cauliflower and fresh cilantro.
