Ingredients

  • 500g pork bones
  • 200g ramen noodles
  • 2 cod fillets (about 150g each)
  • 2 tablespoons miso paste
  • 2 tablespoons butter
  • 100g bamboo shoots
  • 2 large eggs
  • 3-4 cups water
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Begin by preparing the pork bone broth. Simmer pork bones in water for 4–5 hours with garlic and ginger.
  2. In a separate pot, cook the ramen noodles according to package instructions, then drain and set aside.
  3. For the miso butter cod, season cod fillets with salt and pepper. Sear in a hot pan with butter until golden brown.
  4. In a small bowl, mix miso paste with softened butter until well combined. Spoon this mixture over the cooked cod and let it melt slightly.
