Ingredients

  • 500g octopus
  • 150g mixed greens
  • 200g chickpeas, canned
  • 100g cherry tomatoes, halved
  • 50g feta cheese, crumbled
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Fresh herbs (parsley, dill), chopped
  • Salt and pepper to taste

Instructions

  1. Begin by cleaning the octopus under cold running water. Remove the beak and eyes if necessary.
  2. In a large pot, bring water to a boil. Add the octopus and cook for about 30-40 minutes until tender.
  3. Once cooked, remove the octopus and let it cool. Cut it into manageable pieces.
