Argentine Steak Protein Bowl with Chimichurri

Ingredients

  • 300g grilled flank steak
  • 150g cauliflower
  • 2 bell peppers (red and yellow)
  • 60ml olive oil
  • 2 cloves garlic
  • 25g fresh parsley
  • 15ml red wine vinegar
  • 1 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Prepare the chimichurri by blending fresh parsley, garlic, red pepper flakes, olive oil, vinegar, and salt in a food processor.
  2. Marinate the flank steak in olive oil, garlic, and seasoning for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. While the grill is heating up, chop cauliflower into small florets and pulse in a food processor until it resembles rice.
  5. Grill the flank steak for 5-7 minutes per side, or until desired doneness is achieved.
  6. Grill bell peppers for 3-4 minutes until slightly charred and tender.
  7. In a separate pan, sauté the cauliflower rice for about 5 minutes, seasoning with salt and pepper.
  8. Slice the grilled steak against the grain and prepare to assemble the bowl.
  9. In a bowl, place a scoop of cauliflower rice, arrange grilled peppers and steak slices on top, and garnish with chimichurri sauce.
