Caribbean Jerk Chicken Protein Bowl Recipe

Ingredients

  • 500g Chicken thighs
  • 2 tablespoons Jerk seasoning
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 500g Cauliflower florets
  • Salt, to taste
  • 2 ripe Plantains
  • 1 ripe Mango, diced
  • 1 small Red onion, diced
  • Juice of 1 Lime
  • Fresh Cilantro, for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix jerk seasoning, olive oil, and minced garlic.
  3. Rub the seasoning mixture all over the chicken thighs and let marinate for at least 30 minutes.
  4. Spread cauliflower florets on a baking sheet, drizzle with olive oil, and roast for 20-25 minutes until tender.
  5. Boil plantains in salted water for 10-15 minutes until soft, then slice and fry until golden on both sides.
  6. For the mango salsa, combine diced mango, red onion, lime juice, chopped cilantro, and jalapeño in a bowl.
  7. Bake the marinated chicken in the preheated oven for about 30-35 minutes until fully cooked.
  8. Blend roasted cauliflower with a bit of milk or broth for a creamy texture.
  9. Assemble the bowl with cauliflower mash, jerk chicken, fried plantains, and mango salsa on top.
  10. Garnish with lime wedges and fresh cilantro before serving.
