Ingredients

  • 2 pork medallions (200g)
  • 100g wild rice
  • 200g asparagus
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 50ml heavy cream
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Begin by seasoning the pork medallions with salt and pepper.
  2. In a skillet over medium heat, sear the pork medallions for 4-5 minutes on each side until cooked through.
  3. Meanwhile, cook wild rice according to package instructions.
  4. In a separate pan, roast asparagus in olive oil at 200°C (400°F) for 10-12 minutes until tender.
  5. Prepare the Dijon cream sauce by mixing Dijon mustard with heavy cream. Warm gently in a small saucepan.
