Ingredients

  • 400g firm tofu
  • 1 tablespoon turmeric
  • 2 cups cooked freekeh
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons tahini
  • 1 lemon (juiced)
  • Pine nuts (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
  3. In a bowl, mix turmeric, olive oil, salt, and pepper. Toss the tofu cubes in the mixture until evenly coated.
  4. Spread the tofu on a baking sheet lined with parchment paper and roast for 25-30 minutes, flipping halfway through.
  5. While the tofu is roasting, prepare freekeh according to package instructions.
  6. Cut broccoli into bite-sized florets and place them on a baking sheet. Drizzle with olive oil, salt, and pepper, and roast for 15-20 minutes until tender.
