Spicy Chorizo Sweet Potato Hash Bowl: A Flavorful Breakfast Delight

Ingredients

  • 250g chorizo, diced
  • 300g sweet potatoes, peeled and cubed
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 4 eggs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. Toss the sweet potato cubes in olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until tender.
  4. In a skillet over medium heat, add the chopped chorizo and cook until browned, breaking it up as it cooks.
  5. Add diced red and/or yellow peppers to the chorizo and sauté for another 5 minutes.
  6. In a separate pot, bring water to a simmer and add a splash of vinegar. Crack each egg into a small bowl, then gently slide the egg into the simmering water. Poach for about 3-4 minutes.
  7. Once sweet potatoes are roasted, combine them with the chorizo and peppers in the skillet.
  8. Serve the hash in bowls, topped with poached eggs, and garnish with fresh herbs, like cilantro.
