Ingredients

  • 500g chicken breast
  • 150g amaranth
  • 1 medium zucchini
  • 200g cherry tomatoes
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • Fresh herbs (parsley, thyme)
  • Salt and pepper to taste
  • 200ml plain yogurt

Instructions

  1. Begin by marinating the chicken in lemon juice, olive oil, garlic, and herbs for at least 30 minutes.
  2. Preheat the oven to 400°F (200°C).
  3. Cook amaranth according to package instructions, usually boiling it with water for about 20 minutes until tender.
  4. Slice zucchini and halve cherry tomatoes. Toss them in olive oil, salt, and pepper.
  5. Arrange zucchini and tomatoes on a baking sheet and roast for 15-20 minutes until tender.
  6. While the vegetables roast, grill or pan-sear the marinated chicken for 6-8 minutes on each side, or until fully cooked.
