Ingredients

  • 2 chicken breasts (about 300g)
  • 1 ripe mango (about 200g)
  • 200g rice noodles
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded carrots
  • 2 tablespoons chili-lime dressing
  • Fresh cilantro for garnish

Instructions

  1. Start by marinating the chicken breasts in chili-lime dressing for at least 30 minutes.
  2. Preheat the grill over medium-high heat and grill the marinated chicken for 6-8 minutes per side until fully cooked.
  3. While the chicken is grilling, cook the rice noodles according to package instructions. Drain and set aside.
  4. In a bowl, combine cooked rice noodles, shredded carrots, and halved cherry tomatoes.
  5. Once the chicken is cooked and slightly cooled, slice it into strips.
  6. To assemble the bowl, add a serving of the noodle mixture to the bottom, top with grilled chicken strips, and add fresh mango chunks.
