Ingredients

  • 400g firm tofu
  • 250g rice noodles
  • 2 tablespoons vegetable oil
  • 3 tablespoons soy sauce
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 tablespoon sugar
  • 2 eggs, beaten
  • 50g crushed peanuts
  • Fresh herbs (basil, cilantro)
  • Lime wedges for serving

Instructions

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. Heat oil in a pan over medium heat; add tofu cubes and fry until golden and crispy on all sides.
  3. Meanwhile, cook rice noodles according to package instructions; drain and set aside.
