Ingredients

  • 200 grams ramen noodles
  • 400 ml coconut milk
  • 500 ml vegetable broth
  • 1 tablespoon turmeric powder
  • Salt and pepper to taste
  • 100 grams mushrooms, sliced
  • 2 large eggs
  • 50 grams crispy kale

Instructions

  1. Start by boiling water in a saucepan. Add ramen noodles and cook according to package instructions. Drain and set aside.
  2. In a separate pot, heat coconut milk and vegetable broth over medium heat.
  3. Add turmeric, salt, and pepper into the broth mixture, stirring until well combined.
  4. Once the broth is heated through, add sliced mushrooms and let them simmer for about 5 minutes.
