Garlic Butter Scallop Linguine Bowl

Ingredients

  • 200g linguine
  • 400g scallops
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 200g cherry tomatoes
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook linguine in salted boiling water according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, melt 2 tablespoons of butter over medium-high heat.
  3. Season scallops with salt and pepper. Once the butter is melted, add the scallops to the skillet, searing for about 2–3 minutes on each side until golden brown. Remove scallops and keep warm.
  4. In the same skillet, add minced garlic and cook until fragrant, around 30 seconds.
  5. Add cherry tomatoes and cook until they start to soften, about 2–3 minutes.
  6. Stir in the remaining butter and reserved pasta water, mixing until combined.
  7. Add the cooked linguine to the skillet, tossing to coat in the garlic butter sauce.
  8. Return the scallops to the skillet and combine gently.
  9. Garnish with chopped parsley and additional cherry tomatoes before serving.
