Ingredients

  • 2 tilapia fillets
  • 1 tablespoon blackening seasoning
  • 4 cups romaine lettuce, chopped
  • 1 cup corn, canned or frozen
  • 1 cup black beans, canned or cooked
  • 1 cup pico de gallo
  • 1/4 cup chipotle ranch dressing
  • Lime wedges, for garnish

Instructions

  1. Preheat the grill or a skillet over medium-high heat.
  2. Coat the tilapia fillets with blackening seasoning evenly on both sides.
  3. Grill the tilapia for about 3-4 minutes on each side, or until fully cooked and flaky.
  4. While the fish cooks, prepare the salad base with romaine lettuce in a bowl.
  5. Add a layer of corn and black beans on top of the lettuce.
