Honey Chipotle Steak Protein Bowl

Ingredients

  • 500g flank steak
  • 60ml honey
  • 30ml chipotle sauce
  • 2 medium sweet potatoes, diced
  • 15ml olive oil (for sweet potatoes)
  • Salt to taste
  • 1 tsp paprika
  • 300g kale, chopped
  • 15ml olive oil (for sautéing)
  • 300g wild rice

Instructions

  1. Marinate the steak in honey, chipotle sauce, and salt for at least 30 minutes.
  2. Preheat a grill or pan over medium-high heat.
  3. Grill the marinated steak for about 4-6 minutes per side, or until desired doneness.
  4. Remove steak, let it rest for 5 minutes, then slice it thinly.
  5. Preheat oven to 425°F (220°C) and toss diced sweet potatoes with olive oil, salt, and paprika.
  6. Roast sweet potatoes for 20-25 minutes, or until tender and caramelized.
  7. In a pan, sauté the kale with a little olive oil, salt, and garlic until wilted.
  8. Prepare a bed of wild rice as per package instructions.
  9. Assemble the bowl with wild rice, roasted sweet potatoes, sautéed kale, and sliced steak.
