Chipotle Black Bean & Egg Protein Bowl

Ingredients

  • 100g quinoa
  • 2 eggs
  • 200g black beans
  • 1 teaspoon chipotle powder
  • 100g tomatoes
  • ½ avocado
  • Fresh cilantro
  • 1 teaspoon oil
  • Salt and lime juice (to taste)

Instructions

  1. Start by rinsing 100g of quinoa under cold water. Cook it according to package instructions, usually in 200ml of water until fluffy.
  2. In a skillet over medium heat, add a teaspoon of oil and scramble two eggs until fully cooked.
  3. In another pan, warm 200g of black beans and season with 1 teaspoon of chipotle powder.
  4. Prepare fresh salsa by dicing 100g of tomatoes and mixing with chopped cilantro, salt, and lime juice to taste.
  5. Slice half an avocado and set aside.
  6. Once quinoa is cooked, assemble your bowl: start with quinoa at the base, followed by black beans, scrambled eggs, salsa, and avocado.
  7. Garnish with fresh cilantro and serve immediately.
