Ingredients

  • 200g cod fillet
  • 1 tablespoon curry powder
  • 1 cup brown rice
  • 200g cauliflower
  • 150g spinach
  • 2 tablespoons olive oil
  • 100g coconut yogurt
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Season the cod fillets with curry powder, salt, and pepper.
  3. Place the cod on a baking sheet lined with parchment paper and bake for 15-20 minutes until cooked through.
  4. While the cod is baking, cook brown rice according to package instructions.
  5. Chop the cauliflower into florets, toss with olive oil, salt, and pepper, and roast in the oven for 20 minutes or until golden brown.
