Ingredients

  • 200 grams quinoa
  • 150 grams spicy chorizo, diced
  • 2 large eggs
  • 100 grams black beans, drained and rinsed
  • 1 ripe avocado, sliced
  • 100 grams salsa
  • 50 grams cotija cheese, crumbled
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Begin by cooking quinoa according to package instructions, usually about 15 minutes. Set aside.
  2. In a skillet over medium heat, cook the chorizo until browned and cooked through, about 5-7 minutes. Remove from heat.
  3. In the same skillet, crack the eggs and cook sunny side up or scrambled according to your preference, about 3-4 minutes.
