Ingredients

  • 1 cup buckwheat groats
  • 2 cups water
  • Pinch of salt
  • 2 medium apples
  • 1 tablespoon coconut oil
  • 1 teaspoon cinnamon
  • 1/4 cup raisins
  • 2 tablespoons almond butter

Instructions

  1. Rinse 1 cup of buckwheat groats under cold water and drain.
  2. In a pot, combine the rinsed buckwheat with 2 cups of water and a pinch of salt.
  3. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until tender.
  4. While the buckwheat cooks, peel and slice 2 medium apples.
  5. In a skillet, melt 1 tablespoon of coconut oil over medium heat and add the sliced apples.
