Ingredients

  • 1 can (400g) chickpeas
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 eggs
  • 1 small cucumber
  • 200g cherry tomatoes
  • Handful of olives
  • Tahini sauce for drizzling
  • Fresh herbs (parsley or mint)

Instructions

  1. Start by rinsing and draining 1 can (400g) of chickpeas. In a pan, heat 2 tablespoons of olive oil over medium heat.
  2. Add 1 teaspoon of cumin, 1 teaspoon of paprika, and a pinch of salt and pepper to the oil, stirring to combine.
  3. Incorporate the drained chickpeas and sauté for 5-7 minutes until heated through and slightly crispy.
  4. Prepare 2 eggs by poaching them in simmering water for about 3-4 minutes until whites are set, and yolks remain runny.
  5. While waiting for the eggs, chop 1 small cucumber and halve 200g cherry tomatoes. Set aside.
  6. To serve, divide the sautéed chickpeas into bowls and layer the chopped cucumber and tomatoes on top.
  7. Carefully place the poached eggs over the vegetables and garnish with a handful of olives and fresh herbs like parsley or mint.
  8. Finish with a drizzle of tahini sauce on top and season with additional salt and pepper if needed.
