Balsamic Chicken & Farro Bowl

Ingredients

  • 2 chicken breasts
  • 2 tablespoons balsamic vinegar
  • 1 cup farro
  • 1 cup butternut squash, cubed
  • 2 cups arugula
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ cup goat cheese crumbles

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Season chicken breasts with salt, pepper, and half of the balsamic vinegar.
  3. Heat a skillet over medium heat, then add olive oil.
  4. Cook the chicken breasts for 5-6 minutes on each side until golden brown.
  5. Transfer the skillet to the oven and roast for 10-15 minutes until the chicken is cooked through.
  6. While the chicken bakes, cook farro according to package instructions.
  7. Toss butternut squash cubes with olive oil, salt, and pepper, then roast in the oven for 20-25 minutes until soft.
  8. In a bowl, combine cooked farro, arugula, and roasted butternut squash.
  9. Place the grilled chicken on top and drizzle the remaining balsamic vinegar.
