Ingredients

  • 800 grams pork shoulder
  • 240 grams brown rice
  • 200 grams BBQ sauce
  • 150 grams corn (canned or fresh)
  • 100 grams diced tomatoes
  • 1 medium onion, diced
  • Juice of 1 lime
  • Fresh cilantro, to taste
  • 1 medium avocado, sliced

Instructions

  1. Preheat your oven to 150°C (300°F).
  2. Season the pork shoulder with salt, pepper, and your favorite BBQ rub.
  3. Place the pork in a baking dish and cover with BBQ sauce.
  4. Cover the dish with foil and cook for about 4 hours, or until the pork is tender and easily shredded.
  5. While the pork is cooking, prepare brown rice according to package instructions.
  6. For the corn salsa, mix corn, diced tomatoes, chopped onion, lime juice, and cilantro in a bowl.
  7. Once the pork is done, shred it with two forks and mix it with any remaining BBQ sauce.
