Ingredients

  • 400g firm tofu
  • 100g BBQ sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Pepper, to taste
  • 200g red bell pepper, sliced
  • 200g broccoli florets
  • 200g sweet corn
  • 1 tablespoon olive oil

Instructions

  1. Press the tofu to remove excess moisture, then cut it into cubes.
  2. In a bowl, mix BBQ sauce, smoked paprika, garlic powder, salt, and pepper.
  3. Add the tofu cubes to the marinade and let them soak for at least 30 minutes.
  4. Preheat the oven to 200°C (390°F) and prepare a baking sheet with parchment paper.
  5. Spread the marinated tofu cubes, red bell peppers, and broccoli on the baking sheet.
  6. Drizzle with olive oil and season with salt and pepper.
  7. Roast in the oven for 25-30 minutes, turning halfway, until the tofu is golden and vegetables are tender.
  8. While the veggies are roasting, cook sweet corn on the stovetop or in the microwave.
  9. Once everything is cooked, assemble the bowl: start with a base of sweet corn, add the roasted vegetables, and top with the smoky BBQ tofu.
