Ingredients

  • Mahi-mahi fillets (250g)
  • Cajun spice blend (2 tablespoons)
  • Olive oil (1 tablespoon)
  • Spring mix (150g)
  • Fresh pineapple (100g, diced)
  • Papaya (100g, diced)
  • Macadamia nuts (30g, roughly chopped)
  • Passion fruit dressing (to taste)

Instructions

  1. Preheat your grill or skillet over medium-high heat.
  2. Season the mahi-mahi fillets liberally with Cajun spices on both sides.
  3. Add a little oil to the skillet or grill to prevent sticking.
  4. Cook the fish for about 4-5 minutes on each side, or until it develops a blackened crust and is cooked through.
