Cajun Catfish Protein Bowl

Ingredients

  • 2 catfish fillets (approximately 200g each)
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup brown rice (uncooked)
  • 1 cup okra, sliced
  • 1 cup bell peppers, sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. In a bowl, mix Cajun seasoning with a tablespoon of olive oil.
  3. Rub the seasoning mixture onto both sides of the catfish fillets.
  4. Place the seasoned catfish on the prepared baking sheet.
  5. In another bowl, toss sliced bell peppers and okra with olive oil, salt, and pepper.
  6. Spread the vegetables around the catfish on the baking sheet.
  7. Bake for about 15-20 minutes or until the catfish is cooked through and flakes easily with a fork.
  8. While the fish and vegetables are baking, prepare the remoulade by mixing mayonnaise, lemon juice, and desired spices in a small bowl.
  9. Cook brown rice according to package instructions.
  10. Once everything is ready, assemble the bowls by placing a serving of brown rice, topped with roasted vegetables and catfish.
  11. Drizzle the remoulade on top and serve with lemon wedges.
