Ingredients

  • 1 tablespoon olive oil
  • 200g andouille sausage, sliced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 scallions, chopped
  • 1 tablespoon Cajun seasoning
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat 1 tablespoon of oil over medium heat. Add the sliced andouille sausage and cook until browned, about 5 minutes.
  2. Remove the sausage from the skillet and set it aside. In the same skillet, add diced bell peppers and 2 chopped scallions, sautéing until they are soft.
  3. Stir in 1 tablespoon of Cajun seasoning and 1 cup of rice. Cook for an additional minute, stirring to coat the rice with the spices.
  4. Add 2 cups of chicken broth to the skillet. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes until the rice is cooked and liquid is absorbed.
