Smoky Charred Corn & Black Bean Salad Bowl

Ingredients

  • 2 ears of corn, husked
  • 1 can (400g) black beans, rinsed and drained
  • 250g cherry tomatoes, halved
  • 1 avocado, sliced
  • 30g cilantro, chopped
  • 100g lettuce, chopped
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • 1 teaspoon chipotle powder
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or stovetop grill pan over medium-high heat.
  2. Place the corn on the grill and cook, turning occasionally, until charred, about 10-15 minutes.
  3. Remove the corn from the grill and let it cool slightly before cutting the kernels off the cob.
  4. In a bowl, combine the charred corn, black beans, halved cherry tomatoes, and chopped cilantro.
  5. In a small bowl, whisk together olive oil, lime juice, chipotle powder, salt, and pepper to create the dressing.
  6. Pour the dressing over the salad mixture and toss until well combined.
  7. To serve, layer fresh lettuce at the bottom of bowls, then top with the salad mixture.
  8. Slice the avocado and place it on top before garnishing with additional cilantro, if desired.
