Ingredients

  • 200g ramen noodles
  • 2 large eggs
  • 2 tablespoons chili oil
  • 500ml water or broth
  • 1 tablespoon soy sauce
  • 1 teaspoon vinegar
  • 2 scallions, chopped
  • Optional: sesame seeds for garnish

Instructions

  1. Begin by soft-boiling the eggs. Place them in boiling water for 6-7 minutes, then transfer to an ice bath.
  2. In a pot, heat the chili oil over medium heat and add the ramen noodles, cooking according to package instructions.
  3. Once cooked, drain the noodles and set aside.
  4. In the same pot, add water or broth and bring to a simmer.
  5. Add the cooked noodles back to the pot, along with soy sauce and vinegar.
