Ingredients

  • 450g flank steak
  • 2 medium sweet potatoes (about 400g)
  • 30ml olive oil (for steak)
  • Salt and pepper to taste
  • 2 tablespoons butter (for mash)
  • 50ml milk (for mash)
  • 1 cup fresh parsley
  • 1 tablespoon fresh oregano
  • 1 clove garlic
  • 30ml red wine vinegar
  • 200g cherry tomatoes for garnish

Instructions

  1. Preheat your grill or a grill pan over medium-high heat.
  2. Season the steak with salt, pepper, and olive oil. Allow it to rest for 10 minutes.
  3. While the steak is resting, prepare the sweet potato mash by peeling and chopping sweet potatoes into chunks and boiling them for 15 minutes until tender.
  4. Drain the sweet potatoes, return them to the pot, and mash them with butter, salt, and a splash of milk until smooth.
  5. For the chimichurri, combine parsley, oregano, garlic, red wine vinegar, and olive oil in a blender or food processor. Blend until smooth, then season with salt and pepper.
  6. Grill the steak for about 4-6 minutes on each side or until it reaches your desired doneness.
  7. Remove the steak from the grill, let it rest for 5 minutes, then slice it thinly.
  8. To assemble the bowl, place a generous scoop of sweet potato mash at the bottom, layer sliced steak on top, and drizzle chimichurri sauce over it.
